Amazing Fish Dish

This amazing fish dish comes courtesy of my friend Martyn U’ren, whilst on his travels in Vietnam. The presentation is pretty unique with serving the fish upright – I wouldn’t want to touch it for both destroying the beauty of it and collapsing the dish itself!

Update : Martyn has just informed me that this is an elephant ear fish which he ate in the Mekong Delta in South Western Vietnam.
